Recipe Teriyaki Shrimp & Scallop Soba Noodle Bowl

Ingredients
½ lbs soba noodles or linguine
3 T canola oil
½ lbs peeled & deveined Shrimp
½ lbs scallops
½ C shredded carrots
½ C shredded yellow squash
2 celery stalks diagonally sliced
1 C shelled edamame
4 green onions diagonally sliced
1 ½ C bean sprouts
Salt & pepper to taste Teriyaki Sauce
¾ C soy sauce
½ T finely minced ginger
1 T minced garlic (about 4 cloves)
2/3 C packed brown sugar
¼ C water
1 T corn starch
1 t white vinegar
1 t sesame seed oil (optional)
Cook soba noodles according to package directions. Drain, run under cold water and set aside. In a small bowl, stir cornstarch into cold water until dissolved. Mix in remaining ingredients for teriyaki sauce. Set aside. In a large cast iron skillet or griddle (Blackstone), heat 1 1/2 tablespoons oil over medium heat. Pour shrimp into hot pan and sprinkle with salt and pepper. Saute until opaque and pink, 2-3 minutes. Remove from hot pan. Increase temperature to medium high heat and pour in remaining oil. Stir fry squash, carrot, celery and edamame until carrots start to soften, 3 minutes. Pour teriyaki sauce over veggies and stir until sauce thickens slightly. Remove from heat and stir in cooked soba noodles, bean sprouts, green onions and shrimp. Toss to coat in sauce. Taste and add in salt, pepper and/or sugar, according to taste. Serve immediately.
